Peanut Butter Carrot Pancakes

Ingredients

  • 1/3 cup Oat Flour
  • 1 tsp Baking Powder
  • 1/4 cup @sneaky_wholefoods @betterbeingsteph Carrot Blend
  • 1 tbs Vanilla Protein (@macr0mike)
  • 1 small Carrot (grated)
  • 1 tbs Peanut Butter
  • 1 tbs Coconut Yoghurt
  • 1/2 cup Almond Milk

Preparation

  1. Add ingredients to a bowl and stir until combined. You may need slightly more almond milk if your batter is too thick.

  2. Pour desired amount onto a non stick pan and flip after 20-30 seconds.

  3. Leave on pan until cooked. Follow the same steps with the rest of the batter.

  4. Decorate with toppings before serving: (I did peanut butter, raspberry jam, peanuts and Carrot Blend sprinkled)
