Vegan Chickpea and Oat Flour Pancakes

Ingredients

  • 0.5 cup chickpea flour
  • 0.5 cup oat flour
  • 1 cup almond milk
  • 1 tsp chia + flaxseeds
  • 1/3 tsp baking powder
  • 0.5 tsp cinnamon
  • 1 tbsp maple syrup

For serving

  • Coconut yogurt
  • Blueberries
  • Maple syrup

Preparation

  1. Start by combining the dry ingredients in a bowl.

  2. Add the almond milk and whisk together the batter.

  3. Let the batter rest for five minutes.

  4. Fry the pancakes on medium heat for 1-2 minutes on each side.

  5. Serve with coconut yogurt, blueberries and some maple syrup or whatever you prefer.

Tips

  1. This recipe works well with either only oat flour or only chickpea flour.
