Homemade Vegan Cinnamon Scrolls

Ingredients

Dough

  • 2 cup plant milk (room temp)
  • 1/2 cup melted vegan butter
  • 1/4 cup sugar
  • 2 1/4 tsp active dry yeast
  • 5 cups flour
  • 1 tsp salt

Filling

  • 1/2 cup vegan butter
  • 1 tbs cinnamon
  • 3/4 cup brown sugar

Icing

  • 1 cup icing sugar
  • 2 tbsp plant milk
  • 1/2 tsp vanilla extract

Preparation

  1. Beat the filling ingredients together until creamy.

  2. Mix together milk, melted vegan butter, and sugar until the mixture is slightly warm, then sprinkle yeast over it and let it sit for a few minutes.

  3. Add flour and salt to the mixture and mix until combined, then knead into a smooth dough and place in a lightly oiled bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.

  4. Preheat oven to 180°C.

  5. Place dough on a floured surface and knead lightly, adding more flour if needed to prevent sticking.

  6. Roll out dough into a large rectangle about 1 cm thick.

  7. Spread the filling evenly over the dough covering the whole surface.

  8. Roll into a log and slice into approximately 3 cm thick pieces.

  9. Place slices in a baking tray close together, cover, and let rise for about 30 minutes.

  10. Bake for 25-30 minutes until golden brown.

  11. Mix icing ingredients in a bowl and drizzle over warm buns if desired.
