Apple Fritter Cinnamon Swirl Loaf

Ingredients

  • 2 medium apples
  • 1 tablespoon light brown sugar (for apples)
  • 1 teaspoon cinnamon (for apples)
  • 1.5 cups all purpose flour
  • 1/4 cup cornstarch
  • 1 cup unsweetened apple sauce
  • 1/2 cup vegan butter, softened
  • 1/4 cup light brown sugar (for batter)
  • 1/2 cup oat milk
  • 1 teaspoon vanilla extract
  • 1/2 tablespoon baking powder
  • Pinch of salt

Cinnamon sugar mixture

  • 2 tablespoons light brown sugar
  • 1.5 teaspoons cinnamon

Glaze

  • 4 tablespoons powdered sugar
  • 1 tablespoon oat milk

Preparation

  1. Preheat oven to 350 F or 175 C.

  2. Peel and core apples and cut them into medium size pieces, about 2 to 2.5 cups, then toss with 1 tablespoon of sugar and 1 teaspoon of cinnamon and set aside.

  3. Mix 2 tablespoons of sugar and 1.5 teaspoons of cinnamon in a small bowl.

  4. Add vegan butter and 1/4 cup of sugar to a mixing bowl and whisk until fluffy.

  5. Add apple sauce and vanilla extract and mix for another minute or two.

  6. Add flour, cornstarch, baking powder and a pinch of salt and stir until combined.

  7. Pour in oat milk and mix just until dough is smooth, but do not over mix.

  8. Grease and or line your baking pan.

  9. Add half of the dough to the pan, top with half of the cinnamon sugar mix and give it a little swirl, followed by half of the apple mixture, then the remaining dough, apple mixture again and finish with the remaining cinnamon sugar, then give it a second gentle swirl.

  10. Bake for 60 minutes or until a toothpick inserted in the middle comes out clean.

  11. Once the loaf has cooled down, drizzle with glaze and enjoy
