Rustic Vegan Apple Galette

Ingredients

  • 125g vegan butter, chilled
  • 200g plain flour
  • Pinch salt
  • 35-60ml cold water
  • 2 tbsp walnuts, finely chopped
  • 3 apples, cored
  • Juice of 1/2 lemon
  • 1/2 tsp cinnamon
  • 1/2 tsp all spice
  • 1 tbsp plain flour

Caramel sauce

  • 4 soft dates, pitted
  • pinch salt
  • 3/4 cup coconut milk
  • 1 cup coconut sugar
  • 2 tbsp cornstarch mixed with 4 tbsp water
  • 1 tsp vanilla

Preparation

  1. Add butter, plain flour and salt to a large bowl and rub together with fingertips or a dinner knife until it resembles breadcrumbs.

  2. Add just enough cold water for the dough to come together, adding more if too dry, then press into a disc, wrap in clingfilm and chill for 30 minutes.

  3. Preheat oven to 180°C and line a baking sheet.

  4. Slice apples thinly and toss with cinnamon, all spice, flour and lemon juice until evenly coated.

  5. Roll out pastry to a circle about 35cm in diameter, pile apples in the middle, pleat the edges of the pastry around and bake for 45 minutes until golden brown.

  6. Add dates, salt and coconut milk to a food processor and blend until smooth.

  7. Transfer the mixture to a small pan, add coconut sugar, stir well and bring to a boil.

  8. Add cornstarch paste and stir until thickened, about 4-5 minutes.

  9. Remove from heat and stir through vanilla extract.

Serving

  1. Serve galette fresh from the oven, topped with vanilla ice cream, a generous drizzle of caramel sauce and a sprinkle of crushed walnuts.
