Apple Fritter Cinnamon Swirl Loaf
Ingredients
- 2 medium apples
- 1 tablespoon light brown sugar
- 1 teaspoon cinnamon
- 1.5 cups all-purpose flour
- 1/4 cup cornstarch
- 1 cup unsweetened applesauce
- 1/2 cup vegan butter, softened
- 1/4 cup light brown sugar
- 1/2 cup oat milk
- 1 teaspoon vanilla extract
- 1/2 tablespoon baking powder
- Pinch of salt
- 2 tablespoons light brown sugar
- 1.5 teaspoons cinnamon
Glaze
- 4 tablespoons powdered sugar
- 1 tablespoon oat milk
Preparation
Preheat oven to 350 F or 175 C.
Peel and core apples and cut them into medium-sized pieces (about 2 to 2.5 cups). Toss with 1 tablespoon of sugar and 1 teaspoon of cinnamon and set aside.
Mix 2 tablespoons of sugar and 1.5 teaspoons of cinnamon in a small bowl.
Add vegan butter and 1/4 cup of sugar to a mixing bowl and whisk until fluffy. Add applesauce and vanilla extract and mix for another minute or two.
Add flour, cornstarch, baking powder, and a pinch of salt and stir until combined.
Pour in oat milk and mix just until the dough is smooth. Do not over mix.
Grease and/or line your baking pan (an 8x4 inch pan is suggested).
Add half of the dough to the pan, top with half of the cinnamon sugar mixture and swirl it in, then add half of the apple mixture. Repeat with the remaining dough, apple mixture, and cinnamon sugar, and swirl again.
Bake for 60 minutes or until a toothpick inserted in the middle comes out clean.
Once the loaf has cooled, drizzle with glaze and enjoy.
