Delicious Vegan Pumpkin Cupcakes
Ingredients
- 1/3 cup vegan butter
- 3/4 cup sugar
- 1/4 cup pumpkin purée
- 1/2 cup oat milk + tsp cider vinegar
- 1/2 tsp baking powder
- Tsp cinnamon
- 1 cup self raising flour
- 1/2 cup oat flour
Preparation
Preheat your oven to 180c and line a cupcake tin with cases.
Cream together the butter and sugar, then whisk in the milk and pumpkin.
Fold through the dry ingredients and divide your batter between the cases.
Bake for 25-30 minutes.
