Homemade Vegan Gingerbread Cookies
Ingredients
- 1-2 flax eggs
- 1/2 cup coconut sugar
- 1/4 cup almond butter
- 3 Tbsp molasses
- 1/4 cup vegan butter (softened)
- 3/4 tsp ginger
- 1/2 tsp cinnamon
- 1/4 tsp gingerbread spice (optional)
- 1/4 tsp nutmeg (optional)
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1 3/4 cups all purpose flour
Preparation
In a large mixing bowl, prepare one flax egg by mixing 1 tablespoon ground flax seeds and 3 tablespoons of water and let it rest for 5 minutes.
Add a bit softened butter, molasses, almond butter, coconut sugar, salt, spices, baking soda and mix together.
Add all purpose flour to the wet ingredients and stir those together until well combined.
Cover and chill dough for at least one hour (maybe better overnight).
Next, preheat oven to 350 degrees (180C°).
Now, roll out dough between two sheets of parchment paper, make sure to put flour before rolling.
Place the dough on a baking sheet or large plate and freeze for 5 minutes to let them firm up.
This will make them easier to transfer to your baking sheet for baking.
After that just transfer the cookies to a baking sheet.
Bake for 8-10 minutes or until they seem golden brown on the edges.
