Green Matcha Grinch Cookies

Ingredients

  • 1/2 cup vegan butter or coconut oil, softened
  • 1/4 cup aquafaba (liquid from can of chickpeas)
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 2 teaspoons vanilla extract
  • 2 tablespoons @fromthereserve organic matcha
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1/2 cup rice flour
  • 3/4 cup oat flour
  • 2 tablespoons tapioca flour
  • 1/2 cup dark chocolate sugar-free vegan chocolate chips (plus more for topping)

Preparation

  1. Add vegan butter and aquafaba to a bowl and beat with a hand mixer for 1-2 minutes until light and creamy. Add in coconut sugar, maple syrup, vanilla, and matcha. Beat for another minute until well combined.

  2. Add in all remaining ingredients except chocolate chips and mix on low speed until just combined. Gently fold in chocolate chips.

  3. Roll into 1.5 tablespoon sized balls and top with additional chocolate chips. Place on a parchment lined cookie sheet and chill dough in the freezer for 20-30 minutes.

  4. Heat oven to 350 degrees. Divide cookies between two parchment lined baking sheets 2 inches apart and bake for 10-12 minutes. The cookies will still be puffy and soft. Remove from the oven and let cool on the baking sheet for an additional 5 minutes.

  5. Serve warm with ice cold oat milk or an iced matcha latte for dunking.
