Buckeye Brownie Skillet Dessert
Ingredients
Brownie batter
- 1 cup vegan butter, melted
- 1 cup maple syrup
- 1/2 cup almond milk
- 2 tsp vanilla extract
- 1 1/3 cup gluten free one to one flour
- 2/3 cup cocoa powder
- 2 tbsp cornstarch
- 1 tsp baking powder
- 1 tsp salt
Pb buckeye dough
- 2 cups creamy peanut butter
- 1/2 cup vegan butter, melted
- 1 tsp vanilla
- 3 cups powdered sugar
Preparation
Beat together the wet ingredients for the brownie batter until fully smooth and combined.
Add all the dry ingredients and stir to combine.
Pour half the batter into a large 12-inch skillet.
Make the buckeye dough by beating together those ingredients until fully combined.
Layer the dough on top of the brownie batter in the skillet.
Top the peanut butter dough with the rest of the brownie batter and a few chocolate chips.
Bake at 350°F for about 45 minutes, or until the brownie is set but not overbaked.
Tips
Bake time depends on the size of your cast iron skillet; adjust accordingly as this recipe is for a large 12-inch skillet.
Serve warm with a scoop or two of vanilla ice cream.
