Vegan Ginger Spiced Donuts
Ingredients
- 1/2 cup applesauce
- 1/2 cup nut or seed butter
- 1/3 cup maple syrup
- 3 tablespoons molasses
- 1 teaspoon vanilla
- 1 1/2 teaspoons ground ginger
- 1 teaspoon cinnamon
- 1/4 teaspoon cloves
- 1/4 cup coconut flour
- 1/4 cup tapioca starch
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Cinnamon sugar
- 1/4 cup cane sugar
- 1 tablespoon cinnamon
Preparation
Preheat the oven to 350ºF.
Whisk together applesauce, nut butter, maple syrup, molasses, and vanilla extract.
Add spices, coconut flour, tapioca starch, baking powder, and salt.
Mix until combined.
Pipe or spoon into a greased donut pan or muffin pan and smooth the tops.
Bake for 20-22 minutes for donuts or 25-30 minutes for muffins at 350ºF.
Cool for 10 minutes, then flip onto a cooling rack to cool completely.
Mix together sugar and cinnamon, then dip each donut to coat.
Notes
This recipe can be made in a muffin pan if a donut pan is not available.
Baking time may vary depending on the pan used.
