Simple Spiced Vegan/paleo Gingerbread Donuts

Ingredients

  • 1/2 cup applesauce
  • 1/2 cup nut/seed butter (cashew used)
  • 1/3 cup maple syrup
  • 3 tbsp molasses
  • 1 tsp vanilla
  • 1 1/2 tsp ginger
  • 1 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 cup coconut flour
  • 1/4 cup tapioca starch (or corn/arrowroot)
  • 1 tsp baking powder
  • 1/4 tsp salt

Cinnamon Sugar

  • 1/4 cup cane sugar
  • 1 tbsp cinnamon

Preparation

  1. Preheat the oven to 350ºF.

  2. Whisk together applesauce, cashew butter, maple syrup, molasses, and vanilla extract.

  3. Add spices, coconut flour, tapioca starch, baking powder, and salt. Mix until combined.

  4. Pipe or spoon the mixture into a greased donut pan (or use a muffin pan if unavailable) and smooth the tops.

  5. Bake for 20-22 minutes at 350ºF (25-30 minutes for muffins).

  6. Allow the donuts to cool for 10 minutes, then flip them onto a cooling rack to cool completely.

  7. Mix together sugar and cinnamon to create the cinnamon sugar coating.

  8. Dip each donut into the cinnamon sugar coating, or lightly coat with melted coconut oil before dipping if needed.

  9. Enjoy! This recipe makes 6 donuts.
