Creamy Gingerbread Oatmeal with Maple Ginger Pears
Ingredients
- 1/2 cup rolled oats
- 1/2 tsp cinnamon
- 1/2 tsp ground ginger (adjust to taste)
- 1/2 tbsp ground flaxseed
- 1-2 tsp molasses
- 2 tsp maple syrup
- 1/4 tsp vanilla
- 1 1/4 cups unsweetened almond milk
- Salt to taste
- 1 pear, thinly sliced
- 6-8 pecans (whole or chopped)
- 1 tsp maple syrup
- Pinch of cinnamon
- Pinch of ginger
- Pinch of salt
Preparation
In a saucepan, combine rolled oats, cinnamon, ground ginger, ground flaxseed, molasses, maple syrup, vanilla, almond milk, and a pinch of salt. Stir well and bring to a simmer.
Once simmering, stir frequently to prevent sticking or burning at the bottom. Cook for about 5 minutes until the oats are creamy and fully cooked.
For the pears, add thinly sliced pear, pecans, maple syrup, cinnamon, ginger, and a pinch of salt to a nonstick pan.
Cook over low-medium heat, stirring, until the pears soften and are coated with the syrup and spices.
Serve the creamy gingerbread oatmeal in bowls, and top with the sautéed maple ginger pears and pecans.
