Gingerbread Bundt Cake with Salted Caramel Chips and White Chocolate Icing

Ingredients

  • 1/2 cup almond butter
  • 1/3 cup coconut sugar
  • 1/4 cup coconut oil
  • 1/4 cup molasses
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups almond flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 1/4 tsp salt
  • 1/2 cup @lilys_sweets salted caramel chips
  • 1 cup melted @lilys_sweets white chocolate chips

Preparation

  1. Preheat oven to 350°F and grease a bundt pan.

  2. In a large bowl, whisk together almond butter, coconut sugar, coconut oil, and molasses until well combined.

  3. Add eggs and vanilla to the mixture, and whisk until smooth. Set aside.

  4. In a medium bowl, stir together almond flour, baking powder, cinnamon, ginger, nutmeg, cloves, and salt.

  5. Combine the dry ingredients with the wet ingredients and stir until fully incorporated.

  6. Stir in the salted caramel chips from @lilys_sweets.

  7. Pour the batter into the greased bundt pan and bake for about 30 minutes, or until a toothpick inserted into the cake comes out clean.

  8. Allow the cake to cool before adding the melted white chocolate chips from @lilys_sweets on top.
