Gluten-Free Lemon Poppyseed Loaf
Ingredients
- 1 1/2 cups oat flour (gluten-free)
- 2 eggs
- 1/4 cup + 1 tbsp maple syrup
- 1/3 cup oat milk
- 1/4 cup applesauce
- 2 tbsp lemon juice
- 1 tbsp lemon zest
- 1 tsp baking powder
- 1 tsp vanilla
- 2 tbsp poppyseeds
- Topping: Melted coconut butter
Preparation
Whisk the eggs in a bowl.
Add in all the ingredients except for the poppyseeds and mix together well.
Fold in the poppyseeds.
Line a loaf pan with parchment paper.
Pour the batter into the loaf pan.
Bake for 38-40 minutes at 350°F (180°C).
Remove from the oven, let it cool, and add icing if desired.
Slice and enjoy!
