Gluten-Free Lemon Poppyseed Loaf

Ingredients

  • 1 1/2 cups oat flour (gluten-free)
  • 2 eggs
  • 1/4 cup + 1 tbsp maple syrup
  • 1/3 cup oat milk
  • 1/4 cup applesauce
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 2 tbsp poppyseeds
  • Topping: Melted coconut butter

Preparation

  1. Whisk the eggs in a bowl.

  2. Add in all the ingredients except for the poppyseeds and mix together well.

  3. Fold in the poppyseeds.

  4. Line a loaf pan with parchment paper.

  5. Pour the batter into the loaf pan.

  6. Bake for 38-40 minutes at 350°F (180°C).

  7. Remove from the oven, let it cool, and add icing if desired.

  8. Slice and enjoy!
