Strawberry Donuts with Greek Yogurt Icing

Ingredients

  • 1 cup almond flour
  • 1 tbsp coconut flour
  • 2 eggs
  • 3 tbsp maple syrup
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1/3 cup chopped strawberries

Icing

  • 1/2 cup chopped strawberries
  • 1 cup plain Greek yogurt

Preparation

  1. In a bowl, whisk the eggs. Then add in everything else except the strawberries. Mix well.

  2. Fold in the chopped strawberries.

  3. Grease a donut pan well.

  4. Fill each donut cavity about 3/4 of the way with the batter. This recipe makes 6 donuts.

  5. Bake at 350°F (175°C) for 14-15 minutes.

  6. Let the donuts cool completely before removing them from the pan.

Icing

  1. In a high-speed blender or food processor, blend together the chopped strawberries and plain Greek yogurt until smooth.

  2. You can either ice the donuts right away or save the icing in an airtight container in the fridge and ice the donuts as you eat them.

  3. Store the donuts in the fridge.
