Snickerdoodle Banana Bread Bites

Ingredients

  • 3 ripe bananas
  • 1/3 cup Peanut Butter (sub another type of nut butter for paleo)
  • 2/3 cup coconut flour
  • 1/3 cup maple syrup
  • 1 tsp baking powder
  • 1 tsp cinnamon

Snickerdoodle topping

  • 2 tbsp coconut sugar
  • 1 tsp cinnamon

Preparation

  1. In a bowl, mix all of the ingredients together.

  2. In a small bowl, add the snickerdoodle topping.

  3. Line an 8x8 brownie pan with parchment paper.

  4. Add the batter in.

  5. Sprinkle the snickerdoodle mixture on top.

  6. Bake at 350F for 32-34 minutes.

Tips

  1. These are pretty soft so you can put them in the fridge to firm up for 30 minutes if you want.

  2. Or let them cool on the counter, slice, add some more Pb, and enjoy.

  3. Store in the fridge for 4-5 days.

  4. I recommend cutting them into 16 bites to make them more snackable.
