Vegan Chocolate Banana Muffins

Ingredients

  • 3 ripe bananas
  • 1/3 cup nut butter
  • 1/3 cup maple syrup
  • 1/3 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 cup chocolate chips

Preparation

  1. Preheat oven to 350F

  2. In a bowl, mash 3 ripe bananas

  3. Add in 1/3 cup nut butter, 1/3 cup maple syrup, 1/3 cup coconut flour, and 1 teaspoon baking powder

  4. Mix everything together well with a hand mixer, leaving out the chocolate chips

  5. Add in 1/2 cup chocolate chips and fold in

  6. Grease your muffin tin and fill the tins with batter about 3/4 of the way

  7. Bake for 28-30 minutes

  8. Let cool completely before removing from the tin
