No-Bake Snickerdoodle Cookies

Ingredients

  • 1 cup nut butter (I used cashew butter)
  • 1/2 cup coconut flour
  • 1/2 cup maple syrup
  • 1 teaspoon cinnamon

Coating

  • 2 tablespoons coconut sugar
  • 1 teaspoon cinnamon

Preparation

  1. Mix the ingredients together and form into balls.

  2. Line a plate with parchment paper and place the balls on it without flattening them.

  3. Place in the fridge for 20 minutes.

  4. Remove from the fridge and roll in the cinnamon-sugar mixture.

  5. Flatten into cookie shapes.

  6. Place back in the freezer for 1 hour.

  7. Remove and enjoy. Store in the fridge.

Tips

  1. These cookies are paleo, gluten-free, and vegan. Serve on a cute plate for added fun.
