No-Bake Snickerdoodle Cookies
Ingredients
- 1 cup nut butter (I used cashew butter)
- 1/2 cup coconut flour
- 1/2 cup maple syrup
- 1 teaspoon cinnamon
Coating
- 2 tablespoons coconut sugar
- 1 teaspoon cinnamon
Preparation
Mix the ingredients together and form into balls.
Line a plate with parchment paper and place the balls on it without flattening them.
Place in the fridge for 20 minutes.
Remove from the fridge and roll in the cinnamon-sugar mixture.
Flatten into cookie shapes.
Place back in the freezer for 1 hour.
Remove and enjoy. Store in the fridge.

These cookies are paleo, gluten-free, and vegan. Serve on a cute plate for added fun.
