No-Bake Pumpkin Pie Bites
Ingredients
Crust
- 1/2 cup + 3 tbsp. almond flour
- 1/2 cup coconut flour
- 1/4 cup coconut sugar
- 1 tsp. cinnamon
- 1/4 cup nut butter
- 1/2 cup almond milk
Filling
- 1/2 cup pumpkin purée
- 1/3 cup greek yogurt
- 1/4 cup honey
- 3/4 tsp. cinnamon
Preparation
In a large bowl, stir together all of the crust ingredients until a dough forms.
In a lined cupcake pan, press 2 tablespoons of the crust mixture into each cup; this makes 8-9 bites.
In another bowl, whisk together the filling ingredients and pour the batter over each crust.
Freeze for at least 2 hours, then top with whipped cream and cinnamon.
