No-Bake Pumpkin Pie Bites

Ingredients

Crust

  • 1/2 cup + 3 tbsp. almond flour
  • 1/2 cup coconut flour
  • 1/4 cup coconut sugar
  • 1 tsp. cinnamon
  • 1/4 cup nut butter
  • 1/2 cup almond milk

Filling

  • 1/2 cup pumpkin purée
  • 1/3 cup greek yogurt
  • 1/4 cup honey
  • 3/4 tsp. cinnamon

Preparation

  1. In a large bowl, stir together all of the crust ingredients until a dough forms.

  2. In a lined cupcake pan, press 2 tablespoons of the crust mixture into each cup; this makes 8-9 bites.

  3. In another bowl, whisk together the filling ingredients and pour the batter over each crust.

  4. Freeze for at least 2 hours, then top with whipped cream and cinnamon.
