Marbled Chocolate Pumpkin Mini Muffins
Ingredients
- 2 bananas
- 1/3 cup pumpkin
- 1/3 cup peanut butter
- 1/3 cup coconut flour
- 1/3 cup maple syrup
- 1 teaspoon baking powder
- 1/4 cup cocoa powder
Preparation
In a bowl, mix all of the ingredients together except the cocoa powder.
Add half the batter to another bowl.
Add the 1/4 cup cocoa to one mixture and mix it in.
Grease a mini muffin tin.
Add a small spoonful of each batter to each tin.
Swirl it with a toothpick for more of a swirl look.
Bake at 350F for 25-26 minutes.
Let cool completely before removing.
Tips
The division of batter doesn't have to be perfect.
This recipe makes 24 mini muffins and is vegan and gluten-free.
