Marbled Chocolate Pumpkin Mini Muffins

Ingredients

  • 2 bananas
  • 1/3 cup pumpkin
  • 1/3 cup peanut butter
  • 1/3 cup coconut flour
  • 1/3 cup maple syrup
  • 1 teaspoon baking powder
  • 1/4 cup cocoa powder

Preparation

  1. In a bowl, mix all of the ingredients together except the cocoa powder.

  2. Add half the batter to another bowl.

  3. Add the 1/4 cup cocoa to one mixture and mix it in.

  4. Grease a mini muffin tin.

  5. Add a small spoonful of each batter to each tin.

  6. Swirl it with a toothpick for more of a swirl look.

  7. Bake at 350F for 25-26 minutes.

  8. Let cool completely before removing.

Tips

  1. The division of batter doesn't have to be perfect.

  2. This recipe makes 24 mini muffins and is vegan and gluten-free.
