Vegan Banana Snack Cake

Ingredients

  • 3 ripe bananas
  • 1/3 cup Peanut butter (sub another type of nut butter for paleo)
  • 2/3 cup coconut flour
  • 1/3 cup maple syrup
  • 1 tsp baking powder

Preparation

  1. In a bowl, mix all of the ingredients together well.

  2. Line an 8x8 brownie pan with parchment paper.

  3. Add the batter to the pan.

  4. Bake at 350F for 32-34 minutes.

Tips

  1. The cake is soft; refrigerate for 30 minutes to firm up if desired.

  2. Alternatively, let it cool on the counter, slice, add more peanut butter, and enjoy.

  3. Store in the fridge for 4-5 days.

  4. Cut into 16 bites to make them more snackable.
