Vegan Banana Snack Cake
Ingredients
- 3 ripe bananas
- 1/3 cup Peanut butter (sub another type of nut butter for paleo)
- 2/3 cup coconut flour
- 1/3 cup maple syrup
- 1 tsp baking powder
Preparation
In a bowl, mix all of the ingredients together well.
Line an 8x8 brownie pan with parchment paper.
Add the batter to the pan.
Bake at 350F for 32-34 minutes.
Tips
The cake is soft; refrigerate for 30 minutes to firm up if desired.
Alternatively, let it cool on the counter, slice, add more peanut butter, and enjoy.
Store in the fridge for 4-5 days.
Cut into 16 bites to make them more snackable.
