Vegan Gluten-Free S'mores Brownie Bars
Ingredients
Cookie base
- 2 cups almond flour
- 2 tablespoons coconut flour
- 1/2 cup coconut sugar
- 1/4 cup almond milk
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- Sprinkle of salt
Brownie layer
- 2 ripe bananas
- 1/2 cup peanut butter
- 1/4 cup unsweetened cocoa powder
- 1/4 cup maple syrup
- 1/4 cup coconut flour
- 1 1/2 tablespoons vegan vanilla or chocolate protein powder
Toppings
- 2 cups vegan marshmallows
- 1/2 cup vegan chocolate chips
Preparation
Preheat oven to 350°F.
Mix all cookie base ingredients together in a bowl; it will be crumbly, so use hands to press into a ball.
Line a 9x9 inch brownie pan with parchment paper.
Press the cookie mixture into the pan to pack it together.
Bake for 10 minutes at 350°F.
Mash the bananas, then add the remaining brownie layer ingredients and mix with a hand mixer or immersion blender.
Spread the brownie mixture on top of the baked cookie layer.
Return to the oven and bake for 32-35 minutes.
Remove from oven and top with 2 cups of vegan marshmallows and 1/2 cup of vegan chocolate chips.
Place back in the oven on the top rack and broil for 1-2 minutes until marshmallows are toasted.
Slice and enjoy.

Store the bars in the fridge.
