Vegan Gluten-Free S'mores Brownie Bars

Ingredients

Cookie base

  • 2 cups almond flour
  • 2 tablespoons coconut flour
  • 1/2 cup coconut sugar
  • 1/4 cup almond milk
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • Sprinkle of salt

Brownie layer

  • 2 ripe bananas
  • 1/2 cup peanut butter
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup maple syrup
  • 1/4 cup coconut flour
  • 1 1/2 tablespoons vegan vanilla or chocolate protein powder

Toppings

  • 2 cups vegan marshmallows
  • 1/2 cup vegan chocolate chips

Preparation

  1. Preheat oven to 350°F.

  2. Mix all cookie base ingredients together in a bowl; it will be crumbly, so use hands to press into a ball.

  3. Line a 9x9 inch brownie pan with parchment paper.

  4. Press the cookie mixture into the pan to pack it together.

  5. Bake for 10 minutes at 350°F.

  6. Mash the bananas, then add the remaining brownie layer ingredients and mix with a hand mixer or immersion blender.

  7. Spread the brownie mixture on top of the baked cookie layer.

  8. Return to the oven and bake for 32-35 minutes.

  9. Remove from oven and top with 2 cups of vegan marshmallows and 1/2 cup of vegan chocolate chips.

  10. Place back in the oven on the top rack and broil for 1-2 minutes until marshmallows are toasted.

  11. Slice and enjoy.

Tips

  1. Store the bars in the fridge.
