Vegan Devil's Food Cake
Ingredients
- 2 cups almond flour
- 2 ripe bananas
- 1/2 cup cocoa powder
- 2 tablespoons coconut sugar
- 2 teaspoons baking powder
- 1/4 cup apple sauce
- 2 tablespoons cashew butter
- pinch of salt
- 1 tablespoon vanilla extract
- 1/3 cup almond milk
- 1 tablespoon instant coffee
Preparation
Preheat the oven to 350°F/175°C. Grease and line an 8-inch square tin with baking paper, ensuring two sides overhang.
In a large bowl, sift together the almond flour, cocoa powder, instant coffee, baking powder, and salt.
In a separate bowl, mix the mashed ripe bananas, apple sauce, cashew butter, coconut sugar, almond milk, and vanilla extract. You can use an electric mixer.
Slowly add the flour mixture to the wet ingredients and mix until combined.
Bake for 30 to 35 minutes, or until a toothpick comes out clean. Allow to cool for 20 minutes in the pan, then remove from the pan.
Cut into bars and enjoy.
Optional frosting
Frost with zveetz cold brew coffee mousse if available, or make a substitute by mixing half a can of coconut cream with 1 tablespoon instant coffee and 2 tablespoons maple syrup using a mixer until airy and fluffy, then spread on top.
Allow the frosting to set in the refrigerator and top with cacao powder if desired.
