Vegan Gluten-Free Chocolate Cake

Ingredients

  • 3 ripe bananas
  • 12 Medjool dates
  • 200 ml plant-based milk
  • 275 g oat flour
  • 80 g almond flour (or add 80 g extra oat flour)
  • 25 g cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp lemon juice
  • pinch of salt
  • 50 g hazelnuts
  • 50 g dark chocolate, chopped

Preparation

  1. Preheat the oven to 180 degrees and line the cake pan with baking paper

  2. Blend the ripe bananas, plant-based milk, dates, lemon juice, and a pinch of salt in a blender until smooth and thick batter

  3. In a large bowl, mix the oat flour, almond flour, baking powder, baking soda, and cocoa powder together

  4. Pour the banana mixture into the dry ingredients and mix well, then add the hazelnuts and two-thirds of the chopped dark chocolate

  5. Spoon the batter into the cake pan, bake in the oven for 55-60 minutes until done, then let it cool, slice, and enjoy

Notes

  1. This cake is ideal as a snack for work, on the go, or as a meal prep treat

  2. It is vegan and gluten-free, sweetened with banana and dates
