Vegan Matcha Turtle Cookies

Ingredients

  • 1/2 cup tahini
  • 1/2 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup oat flour
  • 1/4 cup almond flour
  • 1 tsp baking powder
  • 1-2 tsp matcha powder

Preparation

  1. Preheat the oven to 180 degrees

  2. Mix tahini, maple syrup, and vanilla extract until a thick and creamy mixture

  3. Add oat flour, almond flour, and baking powder; the dough should be well kneadable

  4. Remove one-third of the dough and set it aside; add matcha to the remaining dough and knead it in

  5. With your hands, shape the matcha dough into round patties for the bodies and use the plain dough to make legs and heads

  6. Place the bodies on a baking sheet and attach the legs and heads; use a fork to make stripes and eyes

  7. Bake the cookies for 10 minutes in the oven and let them cool for another 15 minutes
