Vegan Aquafaba Coconut Cookies
Ingredients
- 1 can of chickpeas
- 1/2 teaspoon baking powder
- 80g coconut sugar
- 200g coconut shreds
- 1 teaspoon vanilla extract
- 50g dark chocolate
Preparation
Make aquafaba by draining the liquid from 1 can of chickpeas, adding 1/2 teaspoon of baking powder, and whisking with a hand mixer until it resembles whipped egg whites consistency.
In a separate bowl, mix together the coconut sugar, coconut shreds, and vanilla extract.
Add this mixture to the aquafaba and mix well.
Form small coconut balls with your hands and place them on parchment paper.
Bake in the oven at 200°C for about 15 minutes until they are slightly brown on top.
Melt the dark chocolate in the microwave and sprinkle it over the cookies.
