Vegan Grain-Free Chocolate Chip Cookies
Ingredients
- 1 flax egg (1 tablespoon flax meal + 3 tablespoons water)
- 2/3 cup (170g) almond butter
- 2 tablespoons (25g) coconut oil, melted
- 2/3 cup (80g) coconut sugar
- 1 teaspoon vanilla extract
- 1/2 cup (65g) cassava flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1/2 cup (70g) chocolate chips
Preparation
Preheat the oven to 350°F.
Beat together the prepared flax egg, almond butter, coconut oil, coconut sugar, and vanilla.
Add the flour, baking soda, and salt.
Mix to combine.
Fold in the chocolate chips.
Scoop 2 tablespoons per cookie onto a lined baking sheet.
Bake for 10-12 minutes.
Cool for 10 minutes, then serve.
Tips
Use more almond butter and less oil for improved texture and flavor.
Choose chunky almond butter instead of smooth for added texture.
Increase coconut sugar for greater sweetness.
