Flourless Peanut Butter Cookies
Ingredients
- 1 cup runny peanut butter
- 1 cup coconut sugar
- 1 teaspoon vanilla extract
- 1 flax egg (1 tablespoon ground flaxseed, 2.5 tablespoons water)
- Chopped chocolate (e.g., burnt caramel chocolate)
- Pinch of Maldon salt
Preparation
Preheat oven to 350°F.
Make the flax egg.
Combine the coconut sugar, vanilla, salt, flax egg, and peanut butter with a hand mixer.
Chop the chocolate.
Roll the mixture into balls and stuff chocolate pieces into the center.
Flatten the balls with your hand and press with a fork.
Sprinkle with salt.
Bake for 12-15 minutes.
Allow to cool.
Drizzle with melted chocolate.
