Vegan Gooey Chocolate Chip Cookies
Ingredients
- 1 1/2 cups blanched almond flour
- 1/4 cup tapioca flour/starch
- 1/4 cup coconut flour
- 1/2 tsp salt
- 1 tsp baking soda
- 1/4 cup coconut butter
- 1/4 cup coconut sugar
- 3 Tbsp maple syrup
- 1 Tbsp flax egg
- 1 tsp vanilla extract
- 1/3 cup dark chocolate chips
Preparation
Preheat the oven to 350°F.
Cream together the coconut butter and coconut sugar until well combined.
Add the flax egg and vanilla extract, and beat for an additional minute until combined.
Sift in all the dry ingredients and mix well to combine.
Stir in the chocolate chips.
Form the dough into heaping tablespoon-sized balls, place on a baking sheet lined with parchment paper or a baking mat, flatten slightly, and top with additional chocolate chips.
Bake for 10-12 minutes until lightly golden brown on top. Ensure not to burn them.
Notes
The dough does not require chilling.
Recipe yields 8-10 cookies.
