Best Chewy Gluten-Free Vegan Chocolate Chip Cookies
Ingredients
- 1/2 C vegan butter, softened
- 1/2-3/4 C swerve brown sugar sweetener (adjust for desired sweetness - can sub regular sugar or coconut sugar)
- 2 TBSP plant based milk
- 2 tsp vanilla extract
- 1/2 tsp almond extract
- 1/2 tsp salt
- 1 1/4 C oat flour
- 3/4 C GF rolled oats
- 1 TBSP arrowroot powder (can sub tapioca flour or cornstarch)
- 1/2 tsp baking soda
- 1/2 C walnuts, chopped
- 1/2 C dark chocolate chips, plus more for topping
Preparation
Preheat oven to 350.
Add wet ingredients to a bowl (butter, sugar, milk, extracts) and beat on high until light and fluffy for about 2 minutes.
Add in dry ingredients (except chocolate and walnuts) and mix just until combined.
Fold in walnuts and chocolate chips.
Chill dough for 30 minutes.
Roll and place on parchment lined baking sheet, top with extra chips, and bake for 8-10 minutes.
Tips
Adjust baking time based on preference: 8 minutes for doughy texture or 10 minutes for crispy edges.
Substitutions can be made for sugar and arrowroot powder as noted in ingredients.
