Vegan Chocolate Chip Cookies with Einkorn Flour
Ingredients
- 1/2 cup vegan butter, softened
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 1/2 tsp vanilla extract
- 1/4 cup unsweetened applesauce
- 2 cups @JovialFoods Whole Wheat Einkorn Flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/4 cup dark chocolate chips
Preparation
In a medium bowl, stir together flour, baking soda, and salt.
Cream butter and sugar until light and fluffy.
Add vanilla and applesauce, then add dry ingredients until just combined (don’t overmix).
Fold in chocolate chips.
Cover the dough and refrigerate for 30 minutes.
Preheat the oven to 375°F (190°C).
Scoop dough onto baking sheets and bake for 9-11 minutes.
Let the cookies cool before enjoying.
