Homemade Vegan "Subway" Chocolate Chip Cookies

Ingredients

  • 150g margarine, melted
  • 90g sugar
  • 90g brown sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 5 tbsp cacao powder
  • 1 tbsp vanilla sugar
  • Pinch of salt
  • 3 tbsp aquafaba (liquid from a can of chickpeas)
  • 210g all-purpose flour
  • 150g chopped vegan chocolate
  • Chopped nuts
  • Sea salt (optional)

Preparation

  1. Preheat oven to 175°C (347°F).

  2. Melt 150g margarine.

  3. In a bowl, add 90g sugar, 90g brown sugar, 1 tsp baking powder, 1/4 tsp baking soda, 5 tbsp cacao powder, 1 tbsp vanilla sugar, and a pinch of salt. Mix well.

  4. Add the melted margarine to the dry ingredients in the bowl. Mix until combined.

  5. Incorporate 3 tbsp aquafaba into the mixture and mix until well combined.

  6. Sift in 210g all-purpose flour and mix until the dough is well combined.

  7. Add 150g of chopped vegan chocolate and some chopped nuts to the dough.

  8. Form the dough into balls and place them on 1-2 baking trays lined with parchment paper. Gently pat down the balls.

  9. Optionally, sprinkle some sea salt over the cookie dough.

  10. Bake in the preheated oven for 10-12 minutes. The cookies should still be slightly soft when you take them out.

  11. Allow the cookies to cool completely before enjoying.
