Vegan Holiday Eggnog Cookies

Ingredients

  • 1 cup vegan butter
  • 2 1/4 cups sugar, divided
  • 2 flax eggs (2 tbsp ground flax mixed with 4 tbsp hot water, let sit for 5 minutes to thicken)
  • 1 tsp vanilla extract
  • 4 cups sprouted spelt flour
  • 1 tsp baking soda
  • A pinch of salt
  • 1 cup vegan eggnog
  • 1 tsp ground nutmeg

Preparation

  1. Beat the butter and 1 1/2 cups of sugar together until fluffy for 2 minutes

  2. Add vanilla extract and flax eggs, then beat for an additional minute

  3. In a separate bowl, sift together flour, baking soda, and salt

  4. Add the flour mixture and eggnog to the butter mixture and mix to combine

  5. In another bowl, mix together nutmeg and the remaining 1/2 cup sugar

  6. Scoop 1 tablespoon balls of dough and roll them in the sugar mixture to coat each cookie

  7. Line parchment paper on three baking sheets and space cookies 2 inches apart

  8. Bake in a preheated oven at 350 degrees for 8-10 minutes
