Simple Vegan Tahini Cookies

Ingredients

  • 1 1/2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/3 cup maple syrup
  • 1/3 cup tahini
  • 1 tablespoon sesame seeds
  • 1/4 cup almonds

Preparation

  1. Pre-heat the oven at 350 degrees.

  2. Add the almond flour, salt, and baking soda and whisk together.

  3. Mix in the vanilla extract, maple syrup, and tahini till the dough comes together.

  4. Scoop out each cookie and place onto the baking sheet.

  5. Press down on each cookie till it's flattened and add an almond in the center.

  6. For sesame cookies, scoop out each cookie and roll into the sesame seeds and place on the baking tray.

  7. Bake for 8 minutes and let the cookies cool.
