Almond Caramel Crisp Cookies
Ingredients
- 4 tbsp vg butter (60g)
- 80g light brown sugar
- 2 tbsp maple syrup
- 75g peeled almonds
- 1 tsp vanilla extract
- 1 tbsp gf white flour
- hazelnut chocolate (@rhythm108 )
Preparation
Melt down the sugar, butter, maple syrup and vanilla extract into a thick caramel for around 5 minutes on low to medium heat.
Blend the almonds and add them along with the flour and a pinch of salt and mix into a sticky dough.
Take a small teaspoon less than a whole teaspoon of the mixture and place on a lined baking tray and bake in a preheated oven for 8 to 12 minutes at 170 degrees.
Allow them to cool until crisp then spread some chocolate on the flat side of one cookie and use another cookie to make a sandwich.
