Almond Caramel Crisp Cookies

Ingredients

  • 4 tbsp vg butter (60g)
  • 80g light brown sugar
  • 2 tbsp maple syrup
  • 75g peeled almonds
  • 1 tsp vanilla extract
  • 1 tbsp gf white flour
  • hazelnut chocolate (@rhythm108 )

Preparation

  1. Melt down the sugar, butter, maple syrup and vanilla extract into a thick caramel for around 5 minutes on low to medium heat.

  2. Blend the almonds and add them along with the flour and a pinch of salt and mix into a sticky dough.

  3. Take a small teaspoon less than a whole teaspoon of the mixture and place on a lined baking tray and bake in a preheated oven for 8 to 12 minutes at 170 degrees.

  4. Allow them to cool until crisp then spread some chocolate on the flat side of one cookie and use another cookie to make a sandwich.
