Salted Peanut Butter Chocolate Chunk Cookies

Ingredients

  • 1/2 cup vegan butter
  • 1 cup runny peanut butter
  • 3/4 cup coconut sugar
  • 1 tbsp vanilla
  • 1 1/2 cups gf flour
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 2-3 tbsp cashew milk
  • 3/4 cup vegan chocolate chunks

Toppings

  • 1/4 cup vegan chocolate chunks
  • Maldon salt

Preparation

  1. Mix the wet ingredients together.

  2. Add the dry ingredients to the wet mixture.

  3. Stir in the cashew milk to adjust consistency.

  4. Fold in the 3/4 cup vegan chocolate chunks.

  5. Shape the dough into cookies.

  6. Press the remaining 1/4 cup chocolate chunks and Maldon salt onto the tops.

  7. Bake at 350°F for 15 minutes.

  8. Allow the cookies to cool before serving.
