Salted Peanut Butter Chocolate Chunk Cookies

Ingredients

  • 1/2 cup vegan butter
  • 1 cup runny peanut butter
  • 3/4 cup coconut sugar
  • 1 tbsp vanilla
  • 1 1/2 cups gf flour
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 2-3 tbsp cashew milk
  • 3/4 cup chocolate chunks +1/4 cup for pressing into top
  • Maldon salt for top

Preparation

  1. Mix the wet ingredients together.

  2. Add the dry ingredients and stir to combine.

  3. Mix in the chocolate chunks and add cashew milk as needed to form a dough.

  4. Shape the dough into cookies and press additional chocolate chunks and Maldon salt on top.

  5. Bake for 15 minutes at 350°F.

  6. Allow to cool before serving.
