Vegan Sweet Potato Brownies
Ingredients
- 1 tablespoon flax + 2.5 tablespoons water
- 1 cup sweet potato purée
- 1/2 cup runny peanut butter (more for drizzling)
- 1.5 tablespoons olive oil
- 1/2 cup raw cacao
- 1/4 cup maple syrup
- 1/4 cup coconut sugar
- 1 teaspoon vanilla
- 1/2 cup gf flour
- 1/2 teaspoon fine salt
- 1/2 teaspoon baking powder
- 1/2 cup protein powder
- 1/2 cup chocolate chips
- Maldon sea salt
Preparation
Preheat oven to 350 degrees.
Make flax egg and set aside to gel for 10 minutes. Line a 9x9 baking dish with parchment paper.
In a large bowl add flax egg, sweet potato purée and peanut butter. Use an electric hand beater to beat together.
Add in salt, baking powder, maple syrup, coconut sugar and vanilla and beat again.
Add in flour, protein powder and raw cacao. Beat on low until mixture is fully combined.
Fold in chocolate chips reserving some for topping.
Bake for 20-22 minutes.
Remove from oven and sprinkle with sea salt.
Wait for brownies to cool before slicing.
Tips
Protein powder is optional and can be left out if desired.
Swirl additional peanut butter on top before baking for extra flavor.
Add flaky salt like Maldon for enhanced taste, as salt pairs well with chocolate.
