Vegan Tahini Pumpkin Brownies

Ingredients

  • 1 flax egg
  • 1 cup pumpkin purée
  • 2 tbsp olive oil
  • 1/2 cup tahini
  • 2/3 cup maple syrup
  • 1 tsp vanilla
  • 1/2 cup cacao
  • 2/3 cup oat flour
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup chopped walnuts
  • 1/3 cup chocolate chips
  • Maldon salt to top

Preparation

  1. Preheat the oven to 350 degrees

  2. Mix the wet ingredients together

  3. Whisk the dry ingredients together

  4. Add the dry mixture to the wet mixture

  5. Pour the batter into a parchment-lined 8x8 inch pan and bake for 25-30 minutes

  6. Allow to cool completely

  7. Slice and enjoy
