Vegan Gluten-Free Pumpkin Spice Blondies

Ingredients

  • 1 15 oz can chickpeas
  • 1/2 cup almond butter
  • 1/3 cup almond flour
  • 1/3 cup pumpkin purée
  • 1/2 cup maple syrup
  • 1 tbsp almond milk
  • 1.5 tsp pumpkin spice
  • pinch of sea salt
  • 1/2 cup chocolate chips plus extra for on top
  • 1 tsp vanilla
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda

Preparation

  1. Mix all ingredients together until well combined and smooth.

  2. Pour the mixture into an 8x8 brownie pan.

  3. Preheat oven to 350 F and bake for 35 minutes.

  4. Let cool for an hour before serving or storing.
