Vegan Chickpea Cookie Skillet

Ingredients

  • 1 cup cooked chickpeas
  • 3 tbsp peanut butter
  • 1/4 cup maple syrup
  • 1.5 tsp vanilla
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 2 tbsp vegan chocolate chips

Toppings

  • Flakey salt for topping

Preparation

  1. Blend the chickpeas, peanut butter, maple syrup, and vanilla until smooth.

  2. Add the baking powder and baking soda and blend for 20-30 seconds.

  3. If the cookie dough is warm, let it cool for 5 minutes in the freezer to prevent the chocolate chips from melting.

  4. Mix in the chocolate chips and place into a greased skillet. Top with more chocolate and flakey salt.

  5. Bake at 350°F for 15 minutes until the top is golden.

  6. Top with vegan ice cream and enjoy.

Tips

  1. The dough can also be eaten raw.

  2. This recipe is great for a midnight snack.
