Fudgy Vegan Bean Blondies

Ingredients

  • 1 1/2 cups @1000springsmill Great Northern Beans
  • 1/2 cup peanut butter
  • 1/2 cup maple syrup
  • 1/4 cup almond flour
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp vanilla
  • Dash of salt
  • 1/2 cup chocolate chips

Preparation

  1. Begin by preparing the Great Northern beans according to the package instructions.

  2. In a food processor, combine the wet ingredients: Great Northern beans, peanut butter, and maple syrup. Mix well.

  3. Add almond flour, baking powder, baking soda, vanilla, and a dash of salt to the food processor. Blend until a thick and creamy consistency is achieved.

  4. Stir in the chocolate chips (do not blend).

  5. Lightly grease a baking pan with coconut oil. Spread the batter evenly in the pan using a spatula. Sprinkle the remaining chocolate chips on top.

  6. Bake the blondies at 350°F (175°C) for 25-30 minutes.

  7. Once out of the oven, allow the blondies to cool before slicing.

  8. This recipe yields about 9 blondies.
