Fudgy Vegan Bean Blondies
Ingredients
- 1 1/2 cups @1000springsmill Great Northern Beans
- 1/2 cup peanut butter
- 1/2 cup maple syrup
- 1/4 cup almond flour
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1 tsp vanilla
- Dash of salt
- 1/2 cup chocolate chips
Preparation
Begin by preparing the Great Northern beans according to the package instructions.
In a food processor, combine the wet ingredients: Great Northern beans, peanut butter, and maple syrup. Mix well.
Add almond flour, baking powder, baking soda, vanilla, and a dash of salt to the food processor. Blend until a thick and creamy consistency is achieved.
Stir in the chocolate chips (do not blend).
Lightly grease a baking pan with coconut oil. Spread the batter evenly in the pan using a spatula. Sprinkle the remaining chocolate chips on top.
Bake the blondies at 350°F (175°C) for 25-30 minutes.
Once out of the oven, allow the blondies to cool before slicing.
This recipe yields about 9 blondies.
