Easy Vegan Chickpea Cookie Skillet

Ingredients

  • 1 cup cooked chickpeas
  • 3 tbsp peanut butter
  • 1/4 cup maple syrup
  • 1.5 tsp vanilla
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 2 tbsp vegan chocolate chips
  • Flakey salt for topping

Preparation

  1. Blend your chickpeas, peanut butter, maple syrup and vanilla until smooth.

  2. Add in your baking powder and soda and blend for 20-30 seconds.

  3. If your cookie dough is warm let it cool for 5 minutes in the freezer, otherwise the chocolate chips will melt.

  4. Mix in your chocolate chips and place into a greased skillet. Top with more chocolate and flakey salt.

  5. Bake at 350°F for 15 minutes until the top is golden.

  6. Top with vegan ice cream and enjoy.

Tips

  1. The dough can also be eaten raw.
