Sweet Miso Chocolate Chip Cookies
Ingredients
- 1 1/2 cups old fashioned oats
- 1 cup unbleached all purpose flour
- 3/4 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 1 cup @enjoylifefoods chocolate chips
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 cup Miso Master Organic Sweet White Miso
- 1/4 cup brown rice syrup
- 1/4 cup maple syrup
- 1/2 cup avocado oil
- 2 teaspoons vanilla
Preparation
Preheat oven to 350 F and line two baking sheets with parchment.
In a large bowl mix the dry ingredients from oats through baking soda.
In a separate bowl mix the wet ingredients from miso through vanilla.
Stir the wet ingredients into the dry and combine until no dry spots remain.
Measure out cookies onto prepared baking sheets using a cookie scoop or about 3 tablespoons per cookie.
Bake one sheet at a time on the middle rack for 15-18 minutes until golden brown.
Let cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
Repeat with the other baking sheet.
Tips
If you don't have brown rice syrup, swap it with more maple syrup.
If you don't have avocado oil, use a different neutral flavor oil, not olive oil.
