Vegan Oatmeal Chocolate Chip Cookies

Ingredients

  • 1 1/2 cups or 150g rolled oats
  • 1 cup or 125g all-purpose flour
  • 1/2 cup dark chocolate chips
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 120g coconut sugar (optional)
  • 1/2 cup vegan butter
  • 5 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons almond milk (add more if needed)

Preparation

  1. Preheat the oven to 350°F (180°C).

  2. Add the rolled oats, flour, chocolate chips, baking soda, salt, and cinnamon to a mixing bowl and mix together.

  3. Cream the vegan butter and the optional coconut sugar together, then add the maple syrup and vanilla extract.

  4. Mix the dry ingredients into the wet ingredients by hand until the mixture is very crumbly.

  5. Add the almond milk and mix well.

  6. Check if you can roll the dough into balls. If it is too crumbly, add more almond milk until it is sticky enough.

  7. Roll the dough into small balls or cookie shapes.

  8. Place the balls on a parchment-lined baking tray.

  9. Bake for around 15 minutes or until done.
