Gluten-Free Salted Caramel Cookie Bars

Ingredients

  • 2 eggs
  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 2/3 cup cashew butter
  • 1/2 cup coconut sugar
  • 1/4 cup maple syrup or honey
  • 2 teaspoons vanilla
  • 1 teaspoon baking powder

Caramel sauce

  • 1/2 cup dates
  • 2/3 cup almond milk
  • 1 teaspoon vanilla
  • Sprinkle of salt

Preparation

  1. Whisk 2 eggs then add in 1 cup almond flour, 2 tablespoons coconut flour, 2/3 cup cashew butter, 1/2 cup coconut sugar, 1/4 cup maple syrup or honey, 2 teaspoons vanilla, and 1 teaspoon baking powder. Mix everything together well.

  2. Line a brownie pan with parchment paper and spread the batter evenly into it.

  3. Soak the dates for 1 hour in warm water, then drain the water.

  4. Pit the dates then chop them.

  5. Add the chopped dates to a food processor.

  6. Add 2/3 cup almond milk, 1 teaspoon vanilla, and a sprinkle of salt to the food processor.

  7. Puree for about 1 minute until smooth.

  8. Spread the caramel sauce evenly over the cookie batter in the pan.

  9. Bake at 350°F for 40 minutes.

  10. Let cool completely, then slice and enjoy.
