Gluten-Free Salted Caramel Cookie Bars
Ingredients
- 2 eggs
- 1 cup almond flour
- 2 tablespoons coconut flour
- 2/3 cup cashew butter
- 1/2 cup coconut sugar
- 1/4 cup maple syrup or honey
- 2 teaspoons vanilla
- 1 teaspoon baking powder
Caramel sauce
- 1/2 cup dates
- 2/3 cup almond milk
- 1 teaspoon vanilla
- Sprinkle of salt
Preparation
Whisk 2 eggs then add in 1 cup almond flour, 2 tablespoons coconut flour, 2/3 cup cashew butter, 1/2 cup coconut sugar, 1/4 cup maple syrup or honey, 2 teaspoons vanilla, and 1 teaspoon baking powder. Mix everything together well.
Line a brownie pan with parchment paper and spread the batter evenly into it.
Soak the dates for 1 hour in warm water, then drain the water.
Pit the dates then chop them.
Add the chopped dates to a food processor.
Add 2/3 cup almond milk, 1 teaspoon vanilla, and a sprinkle of salt to the food processor.
Puree for about 1 minute until smooth.
Spread the caramel sauce evenly over the cookie batter in the pan.
Bake at 350°F for 40 minutes.
Let cool completely, then slice and enjoy.
