Easy Peanut Butter Chocolate Chip Bars
Ingredients
- 2 eggs
- 1 cup almond flour
- 2 tablespoons coconut flour
- 2/3 cup peanut butter
- 1/2 cup coconut sugar
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla
- 1 teaspoon baking powder
- 1/2 cup dairy free chocolate chips
Preparation
Preheat oven to 350°F
In a bowl, whisk 2 eggs
Add in 1 cup almond flour, 2 tablespoons coconut flour, 2/3 cup peanut butter, 1/2 cup coconut sugar, 1/4 cup maple syrup or honey, 1 teaspoon vanilla, and 1 teaspoon baking powder
Mix everything together well
Add in 1/2 cup dairy free chocolate chips and use a spatula to fold them in
Line a brownie pan with parchment paper or grease a large cast iron skillet and spread the batter evenly into it
Optionally add a few extra chocolate chips on top
Bake for 25-27 minutes
Tips
Add in other ingredients like berries to make PB&J bars
Use any nut butter instead of peanut butter
