Easy Peanut Butter Chocolate Chip Bars

Ingredients

  • 2 eggs
  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 2/3 cup peanut butter
  • 1/2 cup coconut sugar
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1/2 cup dairy free chocolate chips

Preparation

  1. Preheat oven to 350°F

  2. In a bowl, whisk 2 eggs

  3. Add in 1 cup almond flour, 2 tablespoons coconut flour, 2/3 cup peanut butter, 1/2 cup coconut sugar, 1/4 cup maple syrup or honey, 1 teaspoon vanilla, and 1 teaspoon baking powder

  4. Mix everything together well

  5. Add in 1/2 cup dairy free chocolate chips and use a spatula to fold them in

  6. Line a brownie pan with parchment paper or grease a large cast iron skillet and spread the batter evenly into it

  7. Optionally add a few extra chocolate chips on top

  8. Bake for 25-27 minutes

Tips

  1. Add in other ingredients like berries to make PB&J bars

  2. Use any nut butter instead of peanut butter

  3. Dairy free chocolate chips can be sourced from brands like Enjoy Life Foods, available at Walmart
