Pecan Pie Cookie Cups

Ingredients

Crust ingredients

  • 1 egg
  • 1/2 cup almond flour
  • 1 tbsp coconut flour
  • 1/2 cup cashew butter
  • 1/4 cup coconut sugar
  • 2 tbsp maple syrup
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla

Pecan layer

  • 1/3 cup almond milk
  • 1/4 cup coconut sugar
  • 1 tsp maple syrup
  • 1/2 tbsp ghee or butter
  • 1 tsp arrowroot flour
  • 1/2 tsp vanilla
  • 1/2 cup pecans

Preparation

  1. Add all of the filling ingredients except the pecans to a pot and stir together.

  2. Bring to low boil for 3 minutes, then reduce to simmer for 5. Add pecans, stir.

  3. Preheat oven to 350°F.

  4. In a bowl, mix all of the crust ingredients together well.

  5. Add to greased muffin tins (this recipe makes 5-6), filling about 3/4 of the way.

  6. Bake for 5 minutes.

  7. Remove from the oven, use a spoon or your thumb to press small holes into them (leave room on sides + bottom).

  8. Fill with the pecan sugar mixture.

  9. Bake for 15 more minutes at 350°F.

  10. Let cool completely, then enjoy! Use a knife to scrape around the edges to remove.
