Pecan Pie Cookie Cups
Ingredients
Crust ingredients
- 1 egg
- 1/2 cup almond flour
- 1 tbsp coconut flour
- 1/2 cup cashew butter
- 1/4 cup coconut sugar
- 2 tbsp maple syrup
- 1/2 tsp baking powder
- 1/2 tsp vanilla
Pecan layer
- 1/3 cup almond milk
- 1/4 cup coconut sugar
- 1 tsp maple syrup
- 1/2 tbsp ghee or butter
- 1 tsp arrowroot flour
- 1/2 tsp vanilla
- 1/2 cup pecans
Preparation
Add all of the filling ingredients except the pecans to a pot and stir together.
Bring to low boil for 3 minutes, then reduce to simmer for 5. Add pecans, stir.
Preheat oven to 350°F.
In a bowl, mix all of the crust ingredients together well.
Add to greased muffin tins (this recipe makes 5-6), filling about 3/4 of the way.
Bake for 5 minutes.
Remove from the oven, use a spoon or your thumb to press small holes into them (leave room on sides + bottom).
Fill with the pecan sugar mixture.
Bake for 15 more minutes at 350°F.
Let cool completely, then enjoy! Use a knife to scrape around the edges to remove.
