Gluten-Free Maple Glazed Cookies

Ingredients

  • 2 eggs
  • 1 cup + 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup + 2 tbsp cashew butter
  • 1/4 cup + 2 tbsp maple syrup
  • 2 tbsp @ancientnutrition vanilla collagen
  • 1 tsp baking powder

Optional additions

  • 1/3 cup nuts or chocolate chips

Maple glaze

  • 2 scoops @ancientnutrition vanilla collagen
  • 2 tbsp maple syrup
  • 1 tbsp cashew butter
  • 1 tbsp almond milk

Preparation

  1. Whisk the eggs then add in all of the other cookie ingredients and mix well, then add in anything like chocolate chips or nuts.

  2. Use a cookie scoop and scoop out a small amount on to a greased baking sheet then flatten.

  3. Preheat oven to 350F.

  4. Bake 14-15 minutes.

  5. Leave them on the pan and let them cool completely.

  6. Mix the icing ingredients together in a small bowl.

  7. Melt in the microwave for 15 seconds.

  8. Drizzle on the cookies.

  9. You can let the glaze harden or enjoy ASAP.
