Gluten-Free Maple Glazed Cookies
Ingredients
- 2 eggs
- 1 cup + 1/4 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup + 2 tbsp cashew butter
- 1/4 cup + 2 tbsp maple syrup
- 2 tbsp @ancientnutrition vanilla collagen
- 1 tsp baking powder
Optional additions
- 1/3 cup nuts or chocolate chips
Maple glaze
- 2 scoops @ancientnutrition vanilla collagen
- 2 tbsp maple syrup
- 1 tbsp cashew butter
- 1 tbsp almond milk
Preparation
Whisk the eggs then add in all of the other cookie ingredients and mix well, then add in anything like chocolate chips or nuts.
Use a cookie scoop and scoop out a small amount on to a greased baking sheet then flatten.
Preheat oven to 350F.
Bake 14-15 minutes.
Leave them on the pan and let them cool completely.
Mix the icing ingredients together in a small bowl.
Melt in the microwave for 15 seconds.
Drizzle on the cookies.
You can let the glaze harden or enjoy ASAP.
